Common Substitutions & Easy to Make Ingredients

Baking Powder:

1 teaspoon baking soda
2 teaspoons cream of tartar

Mix thoroughly and use in any recipe calling for baking powder.

Brown Sugar:

1 tablespoon molasses
1 cup white sugar

Mix ingredients thoroughly together in a bowl. Use in any recipe that calls for brown sugar. *Use 2 tablespoons molasses for dark brown sugar.

Buttermilk:

1 tablespoon white vinegar or lemon juice
1 cup milk

Mix together and let sit for 5 minutes. Stir then use in place of buttermilk in any recipe.

Cake Flour:

1 cup all purpose flour
2 tablespoons corn starch

Mix thoroughly and use cup for cup in place of cake flour.

Castor Sugar:

Granulated sugar

Place equal amount of granulated sugar that you need for castor sugar into a food processor, blender, coffee grinder, or spice grinder. Grind until fine but not powder. Use or store in airtight container.

Garlic Salt:

3 tablespoons garlic
1 tablespoon salt

Mix thoroughly. Use immediately or store in an airtight container.

Half-and-Half:

1 cup milk
1 tablespoon butter

Mix and use in place of half-and-half in equal parts.

Heavy Cream:

3/4 cup milk
1/3 cup butter

Melt butter and mix with milk. Use in place of heavy cream in any recipe.

Honey:

1 1/4 cup granulated sugar
1/4 cup water

Mix thoroughly and use involve of honey.

Lemon Juice:

White vinegar

Use half as much white vinegar as the recipe calls for lemon juice.

Onion Salt:

1 tablespoon onion powder
3 tablespoons salt

Mix thoroughly and use immediately or store in an airtight container.

Powdered Sugar:

Place one cup granulated sugar for each cup of powdered sugar needed in a blender, food processor, coffee grinder, or spice grinder. Blend until powder. Use or store immediately.

Sour Cream:

1 cup cream (heavy or whipping)
1/4 cup buttermilk

Pour ingredients into an air tight sterilized container. Shake well then let sit at room temperature for 24 hours. Your door cream has now formed. Stir and refrigerate.

Vinegar:

Lemon juice

Use twice as much lemon juice in place of the amount of vinegar the recipe calls for.

White Wine:

Apple juice or Apple cider

Substitute either of the above at the same measurement that white wine is called for.

Yeast:

Baking soda
Lemon juice

Add all ingredients according to the recipe. Then, add in equal parts baking soda and lemon juice to equal the amount of yeast called for in the recipe. Dough does not need to rise when made with this substitute so bake immediately.
