Crispy Baked Potato

1 lb potatoes washed
1 cup olive oil
1/2 cup butter (see recipe)
Garlic powder
Onion powder
Salt and pepper to taste
1 cup shredded parmesan cheese

Preheat oven to 400°F. Use a sharp knife and cut 3/4 the way through the potato width wise the entire length of the potato. Place onto a baking sheet with at least 1" sides. Drizzle with olive oil letting the extra puddle around the potatoes. Place a thin slice of butter between every cut. Sprinkle with garlic, onion, salt, and pepper. Bake for 1 and a half hours. During the last couple minutes turn on the broiler and broil on high for 3-5 minutes on the middle oven rack. Remove from oven and immediately sprinkle with shredded parmesan cheese. One potato per serving.
