Cooking Meat: Internal Temperatures

One important tool in every kitchen is the meat thermometer. However, having one is only half the battle. Knowing the safe serving internal temperature of various types and cuts of meat is crucial.

Raw beef, pork, lamb and veal steaks, chops, and roasts to a minimum internal temperature of 145 °F.

Raw ground beef, pork, lamb, and veal to an internal temperature of 160 °F.

Poultry to a safe minimum internal temperature of 165°F.
