This was originally brought to my attention as a cake from the great depression that is super easy to make. Granted we aren't as bad off as our grand parents were but sometimes money is really right. This recipe let's you make a yummy, delicious, super moist cake with out eggs, butter, or milk. Heck you don't even need a mixing bowl or electric mixer!
Recession Cake:
3 Cups flour
6 Tbsp. cocoa (unsweetened)
2 Cup white sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. white vinegar
2 tsp. pure vanilla extract
10 Tbsp. vegetable oil
2 Cups water
1/4 cup powdered sugar (optional)
Icing of choice-optional (see recipe)
Preheat oven to 350° Mix first 5 dry ingredients in a greased 9x13" baking pan. Make 3 depressions in dry ingredients - two small, one larger (see photo below). Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression. Pour water over all. Mix well until smooth.Bake on middle rack of oven for 45 minutes. Check with toothpick to make sure it comes out clean. Sprinkle with powdered sugar if not using icing. If using icing let cool completely first then apply.
Delicious and really moist! I used melted chocolate with cream for the icing. Best cake I have ever had!
